Today we bring your kitchen this recipe for roasted pork loin. It is easy and convenient to prepare, as the pork cooks on its own while you prepare the garnish that it will be served with. To make it juicy, there is no better way than leaving it to marinate all night.

In a large plastic bag or in a container with a lid, mix the crushed garlic cloves, chopped onion, oregano, bay leaf, tablespoon of Rosemary, pepper, white wine and mustard.

Marinate the deboned pork loin in this mixture, allowing it to take on the flavors in the refrigerator overnight before cooking.

To prepare the pork loin, first remove it from the marinade and put the ingredients of the marinade in the blender until obtaining a fine sauce.

Preheat the oven to 356ºF.

Prick the meat all over with a knife, adding several teaspoons of the sauce.

Put a little olive oil and a little of the sauce in an oven dish, and roast the pork loin for approximately one hour.

Every 20 minutes, open the oven and spoon the juices that have been released over the top of the meat. If it seems to have little juice, add tablespoons of meat stock.

Our roasted pork loin is now ready. Leave it to rest a little before serving. It can be served with boiled eggs, sliced zucchini, tomatoes, goat cheese, olives and nuts.
