Today we´re going to cook some delicious sugar-free muffins with chocolate chips. Undoubtedly the best way of enjoying the weekend, preparing this healthy sugar-free snack for the family. There are several different versions of this recipe - all you need to do is to replace the chocolate chips with another complement such as strawberries or raspberries. Delicious!

Preheat the oven to 400ºF while you prepare the non-stick baking tray for your muffins.

First of all, mix the dry ingredients: the flour, sweetener, yeast and bicarbonate.

Using another bowl, mix the other ingredients: the milk, olive oil, vanilla extract and the egg. Once the ingredients have been well mixed, add it to the initial mixture and stir it until you have obtained a uniform mix.

Fill 2/3 of each baking mould and sprinkle the chocolate chips on top.

Bake for 18-20 minutes until the muffins are brown.

Remove from the oven and let them cool for 10-15 minutes to enable the chocolate chips to take shape.
