Around 5:00 PM the Duchess of Bedford, a friend of Queen Victoria, felt hungry and began to ask for tea with something sweet to eat. Pre-heat oven to356 ºF.

Beat the egg whites until stiff and then add the yolks, cane sugar and oil and beat to create a spongy mixture.

Gradually add in the sifted flour, yeast and vanilla extract. Mix very gently with a spatula so that the mixture doesn’t lose its air. Pour the dough into a greased cake pan, sprinkle with flour and bake for 20 or 25 minutes.

Let cool and then remove the cake from the pan for the strawberry shortocakes.

Once cooled, cut the cake into two or three slices and whip the chilled cream with the powdered sugar. Set six to eight strawberries aside for decoration and cut the rest into pieces.

Spread the cream onto one of the slices, top with the strawberries pieces, and repeat until there are three layers.

Lastly, sprinkle with powdered sugar and place the halved strawberries on top as decoration.
