Put the bananas, sugar and milk into a bowl.

Mash with a fork until it just forms a puree - pieces of banana should still be noticeable. This puree is what will make the bread slightly sweet.

Sift the flour into another bowl. Add the baking powder and a pinch of salt. Mix well. Add the oil and the vanilla extract combining all of the ingredients. In a separate bowl, beat the eggs well until they are creamy and form soft peaks, similar to the consistency of a sponge cake, add to the flour mix.

For the final step before baking, fold the mashed bananas throughout the flour mixture with a fork so that the fruit can be appreciated.

Pour the mixture into a greased cake tin and sprinkle the chopped nuts over the top.

Bake the cake in a preheated oven at 180ºC for about 40-45 minutes. To avoid burning the top of the cake, cover it with a piece of aluminum foil for the last 10 minutes.

Take it out of the oven and leave it to cool. Take the bread out of the tin and have a snack!
