Cut the sweet potatoes in half and bake them for 10 minutes at maximum temperature, with just a dash of Puro olive oil.

After this time, remove and leave them to cool.

Put the flesh of the sweet potato in a bowl, chop the tomato into cubes (with the skin and flesh) and add it; squeeze the lime juice over this mixture.

Mix all ingredients well, season with salt and set aside.

Put a layer of the mixture on the sweet potato, and a tablespoon of feta cheese on top.

Put in the oven again with another dash of olive oil on top and leave to cook for 15 minutes at a very low temperature.

Remove from the oven and serve hot decorated with chopped parsley.
